Check out stuff on the "Boss Hawg" a v8 bike. Something in a ported wankel with a simple two speed transmission would be easier to ride, with similar performance and less weight. Some versions of the boss hawg are single speed with long gearing.
Takeoff would be safer with the reduced low end torque of a rotary. A one speed might still work.
